BBQ Fajitas On A Skewer
The wonderful thing about this recipe is that so much of it can be made ahead of time. This comes in handy for parties or family get-togethers. You can also substitute your favorite flavored tortilla for the regular white flour variety. Makes 4 servings.

Ingredients
1/2 lb boneless beef top sirloin, cut 1" thick
1 each green, yellow and red bell peppers
2 sweet onions, 1 red, 1 white (like Walla Walla or Maui)
8 low fat fajita size tortillas
Salsa Fresca (see recipe below)

Marinade:
2 fresh limes, juiced
1 tablespoon corn oil
1 teaspoon ground cumin seeds
1 teaspoon chili powder
1 tablespoon fresh garlic, finely chopped

Directions
Soak 16 (9") bamboo skewers in water for 10 to 15 minutes, then drain just before you are ready to assemble and barbecue. Trim all fat from the steak. Cut the beef crosswise into 1/2" strips. Thread the strips onto 8 of the skewers, weaving them back and forth. Cut the peppers and onions into square chunks and thread them onto the remaining 8 skewers, alternating colors for eye appeal.

In a small bowl, combine marinade ingredients of lime juice, oil, garlic and spices. Mix well, then brush onto each of the skewers.

Cook the vegetables first over the hot part of the grill for approximately 10 to 13 minutes, then move them to the outside, cooler edge of the grill.

Place the beef skewers over the hot part of the grill. Cook for 8 to 10 minutes over medium heat - turning once.

Just before the beef is done, place several tortillas at a time on the grill to warm them. Wrap tortillas in paper towels in a basket. Serve fajitas with salsa fresca.
