Ingredients
 Assorted variety of tomatoes, such as cherry and early girl, sliced into half-inch thick rounds
 olive oil
 2 chicken breasts
 1 tsp paprika
 sourdough baguette or preferred bread
 pesto
 burrata cheese
Directions

Preheat the oven to 400 degrees.

Arrange the sliced tomatoes on a baking sheet lined with parchment paper.

Drizzle the tomatoes with olive oil and season with salt and pepper. Roast in the preheated oven for approximately 40 minutes, or until the tomatoes have softened and developed a rich color. Keep the oven on.

Meanwhile, drizzle 1 tablespoon of olive oil over the chicken breasts. Sprinkle with paprika, salt, and pepper, ensuring even coating. Place the seasoned chicken breasts in the oven and bake at 400 degrees for 20 to 25 minutes, or until cooked through.

Once the chicken has cooled, slice it thinly.

Generously spread pesto onto the open slices of bread. Layer burrata cheese on one side of the bread, followed by the roasted tomatoes and thinly sliced chicken. Season lightly with salt and pepper. Add fresh basil leaves on top. Complete the sandwich with the other slice of bread.

Slice the sandwich into segments and serve promptly to enjoy!
